Chocolate Chip Almond Raisin Cookies


142 grams Butter
100 grams Granulated white sugar
80 grams Brown sugar
2 Eggs
5 grams Vanilla extract
260 grams All-purpose flour
4 grams Baking soda
3 grams Salt
50 grams Golden raisins
50 grams Chopped almonds
142 grams Chopped dark chocolate or chocolate chips


18-20 cookies


Using a stainless bowl with a whisk or stand mixer with a paddle attachment, cream the butter, sugar, and brown sugar.
Mix for 2 minutes. Then scrape down. The mixture should be light and fluffy with a pale uniform color.
Add combined eggs gradually and vanilla extract, scraping down and mix well for another minute.
Sift together flour, baking soda, and salt.
Add the dry ingredients and mix for 1 min, as the dough just begins to come together. Then scrape down.
Add in the chopped chocolate, almonds and raisins and finish mixing just to incorporate and refrigerate for 20 minutes
Scoop dough in parchment paper or silpat. Press the scoop dough a little.
Bake at 325°F with high fan, for 10-12 minutes or until golden brown.
